Hereford has recently given rise to a thriving food scene & seen a surge in independent restaurants which is no surprise, given our agricultural community & idyllic situation creating an abundance of fresh produce.

With the appointment of Head Chef Alex, we’re announcing a change. Alex has curated a concise menu of dishes all of which are prepared in house from locally sourced, fresh seasonal produce.

Many of the independent restaurants have upped their game & are responding to the changing needs of their customers. People are changing their eating habits & are demanding more for their money in terms of seeking out local produce, freshly prepared, ethical & sustainable food.

We’re staying true to our roots. We’ll still be serving up a bistro menu of inexpensive food made up of home cooked dishes & a range of tapas-style small plates to provide a fresh, modern dining experience. Our tapas menu has evolved into innovative world small plates & our classic mains now have a modern twist.

We’re delighted Alex is bringing his culinary passion to Gilbies & excited to have found someone who shares the same vision for our future.
